Balsamic-ally Fig-licious Dressing

Really? Two made up words? Yes, really – because this salad dressing is that exciting!

I concocted this dressing in a kitchen experiment awhile back then remade it today and was reminded of its delectable potential. I intended to take a picture of my salad, but honestly, after one test bite – it had all suddenly disappeared.

Aside from it being so tasty, the ingredients provide some fantastic health benefits. Try it for yourself and you’ll see where all the enthusiasm comes from!

Balsamic Fig Dressing

2 fresh black mission figs

1 tbs dijon mustard

1 tsp maple syrup

3 tbs balsamic vinegar

1 tbs olive oil

Place all ingredients in a high-powered blender. Blend for 30 seconds on high. Enjoy over a delicious salad of green leaf lettuce, red onion slices, warmed walnuts and fresh blueberries.

Health benefit tally:

 

Figs – lowers blood pressure (potassium), helps manage weight (fiber), promote strong bones (calcium)

Dijon mustard – the mustard seeds contained within boast anti-cancer properties by virtue or belonging to the Brassica family of plants, anti-inflammatory (selenium, magnesium)

Maple syrup – antioxidant (manganese), supports heart health, boosts immune system, enhances male reproductive health (zinc)

Balsamic vinegar – antioxidant, mineral-rich, improves digestion, speeds metabolism

Olive oil – lowers risk of heart disease, atherosclerosis, diabetes, colon cancer & asthma, anti-inflammatory, decreases blood pressure
