This isn’t the jello of your childhood. It’s a far healthier version using antioxidant-rich pomegranate, vitamin C-packed lemon with whole kosher beef gelatin and raw honey to sweeten.
Lemon-Pomegranate Gummies
Ingredients
- 3 tbsp whole kosher beef gelatin
- 1/3 cup pomegranate juice
- fresh squeezed juice of 1/2 lemon
- 3 tbsp raw honey
- 3 drops food-grade lemon essential oil (optional)
Directions
Heat pomegranate and lemon juice over very low heat for a few minutes. Add in honey and whisk. Next, slowly add gelatin and whisk until it’s smooth and lump-free. Add essential oil (optional) – whisk again. Pour into candy moulds (silicone works best for easy removal). Put them in the freezer for 5-10 minutes. Once firm, they remain intact at room temperature. Store for up to 2 weeks.
