Pesto is a classic, simple sauce to make. Many recipes contain cheese, but this one keeps it’s delicious taste while being dairy-free.
Parsley Pesto
Ingredients:
- 1 bunch of parsley (2 cups)
- 1/2 cup of toasted pine nuts
- 1/2 cup olive oil
- 1 tsp lemon juice
- 1/4 tsp sea salt
- 1-2 cloves of garlic (or 3 if you love garlic like I do)
Instructions:
Combine all ingredients in high-powered blender or food processor. If you want a chunkier sauce, pulse until desired texture is reached. If you prefer a smooth sauce, blend on high for 30 seconds. Yields aprrox. 1.5 cups. Serve on raw or steamed greens, over roasted or steamed veggies, grilled or baked meat, fish or poultry – get creative and enjoy!
